Finca Soledad is no stranger to us! We starting working with Pepe in 2022 and have since served exceptional coffees from his farm - Typica Mejorado, Sydra and Geisha.
This is a rare lot of a new cultivar of the Sydra varietal from Finca Soledad. Carefully processed by Pepe Jijon, the coffee undergoes a 48 hour whole cherry fermentation and finishes off with a 40 day dark room drying. 'Wave' is referencing a temperature wave, going from higher temperature to lower temperature, utilising fermentation tanks and refrigerators, in a sustained way that keeps the embryo alive.
